Leftover pulled pork recipes are so convenient, since the meat is already cooked and ready to use! A box of Jiffy cornbread mix is yet another shortcut to get this casserole prepped for the oven in just minutes.


To reheat the leftovers: If reheating an entire casserole, cover the dish loosely with foil and bake in a 350F oven until warmed through (about 15-20 minutes). Individual portions can be reheated in the microwave for 1-2 minutes.


This casserole is super easy to make. Start with making the cornbread base. Mix together Jiffy mix, creamed corn, eggs, milk, and cheese. Pour the batter into a baking dish. Partially bake the cornbread and remove it from the oven. Top cornbread with pulled pork, BBQ sauce, and cheese. Bake until the pork is warm and the cornbread is done.


You can make this ahead of time and freeze it for later. I suggest partially baking the cornbread and adding the pulled pork, BBQ sauce and cheese and then freezing the casserole. When ready to bake, thaw completely and bake 20 to 30 minutes.


Made this tonight and it was a hit! We usually smoke a large pork shoulder every couple of weeks and are always looking for great recipes for the leftover meat. This was perfect. Hubby and two little kids really enjoyed it! Thank you for posting this!


Two of my very favorite comfort foods: macaroni and cheese and pulled pork. Not only are they delicious, but I love how versatile each of the classic recipes are. You can literally pair just about anything with shredded pork and cheesy macaroni.


To the shredded pork, add about 1 cups of your favorite barbecue sauce. We like homemade bbq sauce, but you can use absolutely anyone you like. Please note that the type of bbq sauce you use will result in the flavor of the casserole. Make sure you choose a bbq sauce you love.


It's honestly way better than any sandwich you can get, and it's loaded with so much flavor. I mean, this dish is chock-full of tender, shredded pork, sweet, tangy BBQ sauce, a mix of veggies, and hash browns. Then, all of that gets covered in shredded cheese and baked to golden brown deliciousness. It's a little savory, a little smoky, a little sweet, and a whole 'lotta yummy!


Anyway, you probably know by now I'm a huge fan of easy casseroles, and one of the reasons I can't get enough of this pulled pork casserole recipe is that it's so, so simple to make. All you have to do is combine the ingredients in a couple of bowls, add them to a casserole dish, top the whole thing with cheese, and bake. You don't even have to defrost your hash browns, just pull them out of the freezer and toss 'em in.


I know it sounds too good to be true, but it really is that easy. The whole thing will take you about 45 minutes from start to finish, with the majority of the time spent baking the casserole. And, remember, just 5 minutes of that is active cooking/prepping.


While I recommend making this pulled pork casserole with the ingredients listed above, there are plenty of ways to switch up this recipe to make it your own. With that said, I'll go over some of my favorites below.


Now, of course, this recipe calls for Colby jack cheese - I think it just adds the best cheesy flavor to the casserole - but any shredded cheese will work great. If I don't have any Colby jack cheese at home, then sometimes I'll use cheddar cheese or even a combination of cheddar cheese and pepper jack cheese for a little spice.


By the way, this recipe calls for premade pulled pork. I usually just use leftover pulled pork from the night before. If you don't have any leftover shredded pork though, then you can buy pre-cooked pork to save time when you're ready to make this casserole recipe.


All you have to do is a little mixing and then just bake the casserole in the oven - there's really no cooking on your part! Plus, the whole entire process of making it comes down to following just 3 simple steps.


Next, take out a large bowl and mix together the cooked shredded pork with the BBQ sauce of your choice. Then, grab a second bowl, and mix together half of the shredded cheese, frozen hashbrowns, corn, onion, and green bell pepper in it.


Once all of your ingredients are fully mixed together, transfer the pulled pork mixture to the prepared baking dish, and then top it with the hashbrown mixture. You could even mix the pulled pork with the veggies and hashbrowns and transfer the combined mixture to the baking dish if you want to. I just like giving it layers.


Speaking of leftovers, you can just transfer them to an airtight container and store 'em in the fridge. Stored this way, your pulled pork casserole should last in the fridge for up to 3-4 days. Just keep in mind that the time you can keep the casserole depends on if you're using pulled pork made that day or leftover pulled pork.
